Honey muesli balls
These energy-boosting apricot and coconut muesli snacks are sticky, chewy and yummy.
Ingredients
- 225g (11/2 cups) nut-free toasted muesli
- 120g (3/4 cup) diced dried apricots
- 80g (1/2 cup, lightly packed) brown sugar
- 45g (1/2 cup) desiccated coconut
- 80ml (1/3 cup) honey
- 50g unsalted butter, melted
Instructions
- Process muesli, apricot, sugar and coconut in a food processor until finely chopped. Add the honey and butter and process until the mixture is very finely chopped and holds together when squeezed.
- Roll tablespoonfuls of the muesli mixture into balls. Place on a lined tray. Place in the fridge for 30 minutes or until set. Store the muesli balls in an airtight container in the fridge for up to 4 days.
