The creatively designed sweet potato ka halwa is a lovely variation to the traditional Indian sweet dish called halwa. The sweet potato halwa is prepared from boiled and mashed sweet potatoes, sugar, ghee and spices like cardamom.
Ingredients
  • ½ kg sweet potatoes (shakarkand)
  • 3 cups sugar
  • 10 almonds (badam), peeled and blanched
  • 12 cups milk
  • 8 pods of cardamom (elaichi)
  • 4 tbsp vanaspati
Instructions
  1. Wash the sweet potatoes;
  2. Roast the sweet potatoes on atava;
  3. Steam cook the sweet potatoes in a covered pan till they become tender;
  4. Mash the sweet potatoes when cooled;
  5. Boil the milk till it becomes thick and approximately half the quantity;
  6. Make the sugar syrup in a separate pan;
  7. Heat the dalda ghee in a separate pan and roast the cardamoms in it;
  8. Add the mashed sweet potatoes in the ghee;--stir fry for a few minutes;
  9. Now add the boiled milk to the sweet potatoe mixture;
  10. When this mixture gets thick add the sugar syrup to it;
  11. Cook on medium heat with the lid on the pan;
  12. When the halwa is ready spread it out on a greased tray evenly;
  13. Cut into equal pieces;
  14. Garnish with raisins onthe top--serve attractively
