A typical Andhra preparation and a popular one where the vegetables are cooked in tamarind juice and absorbed in jaggery with the spicy flavor which just leaves a awesome taste in mouth.
Ingredients
- Fenugreek seeds ½ Teaspoons
- Oil 4-5 Teaspoons
- Mustard seeds ½ Teaspoons
- Cumin seeds ½ Teaspoons
- Red chillies 4-5 Numbers
- Garlic 10 Clove
- Curry leaves 2 Springs
- Onions 2 Numbers
- Salt 1 0
- Green chillies 2-3 Numbers
- Turmeric 1 Teaspoons
- Yam 1 Cup
- Sweet potato 1 Cup
- Pumpkin 1 Cup
- Cucumber 1 Cup
- Bottle gourd 1 Cup
- Carrot 1 Cup
- Tomatoes 1 Cup
- Chilly powder 1 Teaspoons
- Coriander powder 1 Teaspoons
- Tamarind juice 1 Cup
- Jaggery 2 Teaspoons
- Coriander leaves 1 Bunch
Instructions
- Add oil in a pressure cooker then add fenugreek seeds, mustard seeds, cumin seeds, red chillies and sauté it then add garlic, curry leaves, onions, salt, green chillies, and turmeric. 2. Keep mixing and add pieces of yam, sweet potato, pumpkin, cucumber, bottle gourd, carrot, tomatoes, chilli powder, coriander powder and some more salt. 3. After 2-3 min of sauteing add water and mix it well. 4. Now add tamarind juice and check the sourness and salt. 5. Cover it with lid and let it cook for 5 min on medium flame. 6. Wait for one whistle to come and then remove the lid. 7. At last add some jaggery and simmer it for another 2 min and switch off the flame. 8. Garnish it with fresh coriander leaves.
