simple eggplant chutney Eggplant chutney is a spicy and tangy chutney, eggplant/ brinjal blended with ginger, garlic, tomatoes, green chilies and tamarind.
Ingredients
- Channadal Fried 1 Tablespoons
- Coriander Leaves 1 To Fry
- Cumin 1 Teaspoons
- Mustard Seeds 1 Tablespoons
- Curry Leaves 10 Leaf
- Oil 2 Tablespoons
- Tamrind 30 Grams
- Salt 1 To Taste
- Green Chilies 4 Numbers
- Tomato 2 Numbers
- Brinjal Big 1 Numbers
- Chaewnuts 1 Tablespoons
- Hing Optional 1 Pinch
- Urad Dal 1 Teaspoons
Instructions
- fry eggplant and keep asideheat oil add nustard,cumin,ginger garlic,cashewand fried channadal ( nuts are optional)add gr chilli curryleaves,hing and tamrind and tomatoes cook till soft and well done
- add fried brinjal and saute and put in a blender and add tempering serve hot.
