Aloo Chole Saagwala is a very popular and common dish in the Punjabi cuisine served in most restaurants made with a mix of potatoes and Kabul channa in awesome saag gravy or chaman masala made with spinach and spices. Saag means a leaf based dish eaten in South Asia with roti or naan.
Ingredients
  • Chilly Powder ½ Teaspoons
  • Cumin Powder ½ Teaspoons
  • Coriander Powder 1 Teaspoons
  • Oil For Deep Fry
  • Mint Leaves 1 Bunch
  • Coriander Leaves 1 Bunch
  • Nut Meg Powder i Pinch
  • Onion Chopped 1 Numbers
  • Green Chilly 5 Numbers
  • Garlic 4 Clove
  • Ginger 1 inch Piece
  • Spinach 150 Grams
  • Ginger Garlic Paste 1 Teaspoons
  • Tomatoes 2 Numbers
  • Chole 150 Grams
  • Potatoes 100 Grams
Instructions
  1. First blanch the spinach and keep it aside.
  2. Heat oil in a pan add ginger and garlic pieces, add green chilly, chopped onions, cook this till onions are golden in colour, add nut meg powder, coriander leaves, mint leaves, spinach (blanch) sauté it for a minute and put this into the blender and make a paste.
  3. Take same pan and add oil heat it and add chopped onions, ginger garlic paste, cook this till raw flavour is gone, add tomatoes, cumin powder, coriander powder, and chilly powder, cook this in a slow flame till tomatoes are tender, then add chole (garbanzo) mix this and cook it for few minutes.
  4. Then add spinach paste and add potatoes (boiled and fried) cook this for 5 minutes in a slow flame then switch off the flame. Serve this with puri.
