Summer Salad
A lemon and honey dressing perked up with ginger, makes watermelons even tastier. Watermelons are a rich source of iron, and provide you a good nutrient boost. When watermelon is not season, use muskmelon, which tastes equally good.
Ingredients
- For the ginger dressing
- ½ tsp grated ginger (adrak)
- 2 tsp lemon juice
- 1 tsp honey
- 1 tbsp low fat curds (dahi)
- 1 tbsp milk powder
- salt to taste
- Other ingredients
- 2 cups watermelon (tarbuj) cubes
- 1 cup pineapple cubes
- 1 cup boiled sweet corn kernels (makai ke dane)
- 1 cup cucumber cubes
- salt to taste
- 2 tbsp grated carrot for the garnish
Instructions
- For the ginger dressing
- Combine all the ingredients together in a bowl and whisk well. Refrigerate to chill.
- How to proceed:
- Combine the watermelon, pineapple, corn, cucumber and salt together in a serving bowl and mix well. Refrigerate to chill.
- Just before serving, pour the dressing over it and toss gently.
- Serve immediately garnished with carrots.
