Healthy Pineapple And Coconut Rice - Be Fit Be Cool AAPI
- Cashew Nuts 10 Grams
- Almonds 10 Grams
- Onion (Chopped) 1 Large
- Bell Peppers (all Three) 2 Tablespoons
- Green Chilies (Finely Chopped) 1 Tablespoons
- Salt . To Taste
- Pineapple (Diced) 1 Cup
- Mustard Paste 1 Tablespoons
- Fresh Coconut (Grated) ½ Cup
- Mint Leaves 2 Teaspoons
- Coriander Leaves 2 Teaspoons
- Rice (Boiled) 2 Cup
- In a pan, add cashew nuts, almonds, chopped onions, bell peppers, green chilies and cook till the onions are transparent.
- Add salt and pine apple dices and cook for few seconds
- Add mustard paste, grated coconut and mix well.
- Finally add mint leaves, coriander, rice and mix well.
- Serve it hot.
