These skewered vegetable pieces have a superb flavour. Serve these topped or along with the peanut sauce.
Ingredients
  • ½ cup paneer (cottagte cheese) , cut into 12 mm (1/2") cubes
  • ½ cup baby corn, cut into 25 mm (1") pieces
  • ½ cup green or red capsicum cubes
  • 1 tbsp oil
  • To be mixed into a marinade
  • 2 tsp curry powder
  • 2 tsp lemon juice
  • 2 tsp honey
  • ½ tsp salt
  • 1 tbsp oil
  • For the peanut sauce
  • 2 tbsp peanut butter
  • ½ tsp soy sauce
  • 1 tsp sugar
  • ½ tsp chilli powder
  • salt to taste
Instructions
  1. For the peanut sauce:
  2. Combine all the ingredients in a pan with ½ cup of water. Mix well.
  3. Bring the sauce to a boil. Remove and keep aside.
  4. How to proceed:
  5. In a large bowl, combine the paneer, baby corn, capsicum and the prepared marinade and toss well.
  6. Arrange a piece of paneer, capsicum and baby corn on a toothpick. Repeat for the remaining vegetables (to make approximately 15 sticks).
  7. Heat the oil on a tava (griddle) and sauté the satay sticks on all sides till the vegetables brown lightly (approximately 4 to 5 minutes).
  8. Serve hot with the peanut sauce.
