Thotakura is usually consumed as Dal or Fry,but try this different curry with a combination of Dried prawns. Once in a while give this sting of taste to the regular curries and surprise your family on the dinning table.
Ingredients
- Thotakura/Amaranthu Leaves:3 cups
- Dried Prawns:1 cup
- Onions:1 cup
- Green Chillies:6
- Tomatoes: 1 cup
- Ginger&garlic paste:2 spoons
- Coriander Leaves:2 stems
- Mint Leaves:2 stems
- Salt:As required
- Oil: As required
- Chop the Amaranthus leaves after washing them with water
Instructions
- Switch on the stove,take a pan and add ½ cup of oil and fry the dried prawns and keep aside
- Add 2 more spoons of oil,1 cup onions,6 green chillies and fry them well
- Now add chopped 3 cups of chopped Thotakura,coriander leaves and mix well over a lid on the pan
- Add 2 spoons of ginger&garlic paste,1/4 spoon turmeric powder,sufficient salt and mix well
- Add 1 cup of tomatoes,1 cup of fried dry prawns and let it cook for about 10 minutes
