Banana Stalk Salad
Banana stem, seems to be waste of the banana plant but is very good for health. Banana stem is high in nutritive value in different ways. It’s a source of energy and can be eaten when he or she is fatigued or tired. This stem can be taken out and consumed in various forms as salads, raitas, vegetable and soups. The banana stem is thick and fibrous and has the taste of banana. It forms an integral part of most South Indian health conscious families. The banana stem adds bulk to the food and is very useful for losing weight. The fiber in banana stem helps to cure constipation and detoxify the body. Tender banana stem is cut into pieces then mixed with lemon juice, salt, sugar which is further tempered with mustard seeds, hing and coriander leaves.
Ingredients
- Banana stem, cut into round slices 1 Cup
- Lemon juice 1 Numbers
- Sugar 1 Teaspoons
- Salt 1 0
Instructions
- In a bowl, add lemon juice, sugar, salt and mix well until the sugar gets dissolved. 2. Cut the outer rind of the banana steam and remove the core. 3. Cut the core into thin round slices and in circular motion slowly pull out the fibrous threads. Soak the round slices in water. 4. Remove the raw banana slices and mix them in the lime and sugar mixture. Coat all the pieces well and rest for a while until they get slightly soft. 5. For tempering the salad, add 1 tsp oil in a pan and when it gets hot, add 1?2 tsp mustard seeds, 2-3 red chillies, pinch of hing, pinch of turmeric powder and 2 sprigs curry leaves. 6. Add freshly chopped 1 bunch coriander leaves and then pour in the tempering over the banana slices and mix well. 7. Rest it for few minutes and serve fresh.
