Melon and Papaya Scoops in Honey Ginger Dressing
Vitamin A rich papaya and melon scoops tossed together in an unusual zinc rich honey ginger dressing to enhance your immunity.
Ingredients
- 1 cup papaya scoops (preferably the red variety)
- 1½ cups muskmelonscoops (kharbooja)
- 1½ cups watermelon (tarbuj) scoops
- To be blended into a honey-ginger dressing
- 2 tbsp honey
- 1 tbsp lemon juice
- 2 tsp ginger (adrak) juice
- ¼ tsp crushed pepper
- salt to taste
- For the garnish
- mint sprigs
Instructions
- Arrange the scooped fruits in a bowl, pour the dressing and toss gently.
- Refrigerate till chill and serve garnished with mint sprigs.
