This colourful soup makes an appealing entrée. Moong dal has a high potassium content which helps keep blood pressure under check.
Ingredients
- For the moong dal purée
- 3 tbsp yellow moong dal (split yellow gram)
- ½ cup chopped onions
- ¼ cup carrot cubes
- Other ingredients
- ½ cup chopped onions
- ½ tsp chopped garlic (lehsun)
- 2 tbsp chopped celery
- 2 tbsp cooked barley (jau)
- 1 tbsp cornflour
- 2 tsp oil
- salt and black pepper (kalimirch) powder to taste
Instructions
- For the moong dal purée
- Wash and soak moong dal for few hours.
- Drain, add 3 cups of water, onions and carrots and pressure cook for 1 to 2 whistles.
- When cooked, purée till smooth. Keep aside.
- How to proceed
- Heat the oil in non-stick pan and sauté the onions, garlic and celery for 1 minute.
- Add the moong dal purée and bring to boil. Simmer for 3 to 4 minutes and stir in the cooked pearl barley, salt and pepper.
- Mix the corn flour with ½ cup of water and add to the soup.
- Simmer for another 3 to 4 minutes. Serve hot.
Notes
Pearl barley is easily available at local chemists. Wash it thoroughly and cook in boiling water like rice.
