Sprouted Fruity Bean Salad

Sprouting increases B-complex vitamins of the beans... when tossed into a salad with fruits, it helps to freshen up your skin.
Ingredients
- 1 cup mixed boiled sprouted pulses (moong, moath beans, chana etc.)
- ¾ cup chopped apples
- ½ cup orange segments
- 2 tbsp cut grapes
- 2 tbsp sliced white radish
- ¾ cup chopped lettuce
- ½ cup chopped spinach (palak)
- 1 tsp finely chopped green chilli (optional)
- salt to taste
- To be mixed into a dressing
- ¾ cup curds (dahi)
- 2 tbsp chopped mint leaves (phudina)
- 1 tsp sugar
- salt to taste
Instructions
- Mix all the ingredients for the salad.
- Just before serving top it with the dressing and refrigerate.
- Serve chilled.
