Waldorf Salad
For all the weight watchers who have been longing for a rich, creamy mayonnaise dressing, here's an equally interesting option. Relish the famous Waldorf salad with a low fat version of mayonnaise that is made using boiled potatoes, curds and skim milk powder. And while you are it, make the most of this low fat mayonnaise alternative for other salads too!
Ingredients
- For the potato mayo dressing
- ½ cup boiled mashed potatoes
- 2 tbsp low fat curds (dahi)
- ¼ cup low fat milk, 99% fat free
- 1 tbsp skim milk powder
- 2 tsp powdered sugar
- 1 tsp white vinegar
- ½ tsp mustard (rai / sarson) powder
- salt and black pepper (kalimirch) powder to taste
- Other ingredients
- ¼ tsp lemon juice
- 1 cup apple cubes
- ½ cup capsicum (red, yellow, green) cubes
- 1 cup shredded cabbage
- 1 tbsp chopped basil
- 1 tbsp chopped celery
- salt to taste
Instructions
- For the potato mayo dressing
- Blend all the ingredients together in a mixer till smooth. Refrigerate to chill.
- How to proceed:
- Add the lemon juice the apples and refrigerate to chill.
- Put the capsicum, cabbage, basil and celery in a vesselful of ice-cold water for half an hour.
- Drain, wrap in a muslin cloth and refrigerate till ready to serve.
- To serve, combine all the ingredients in a bowl, add the salt and pour the dressing on top.
- Serve immediately.
