Broccoli Pizza Pie

Filled breads are the most appealing. They are great for buffet presentations and have the element of surprise when the contents are revealed. Rustic pizza pies come from rural Southern Italy. Unlike pizzas which cooked quickly at a high temperature, they are baked at a moderate heat to allow the ingredients inside to cook evenly. The broccoli can be substituted using any vegetable such as cauliflower or a combination of garden fresh veggies!
Ingredients
- ½ recipe Basic Pizza Base
- 4 tbsp Pizza Sauce
- butter or oil for greasing
- For the filling
- 1½ cups finely chopped broccoli
- ⅓ cup chopped onions
- 1 tbsp chopped garlic (lehsun)
- ¼ tsp dried mixed herbs
- 1½ cups grated cooking cheese or grated mozzrella cheese
- 1 tbsp butter
- salt and black pepper (kalimirch) powder to taste
- For glazing
- 2 tbsp milk
- 1 tbsp butter
Instructions
- For the filling
- Heat the butter in a pan, add the onions and garlic and sauté till the onions turn translucent.
- Add the broccoli and sauté for 2 to 3 minutes.
- Cool the mixture, add the mixed herbs, cheese, salt and pepper and mix well. Keep aside.
- How to proceed
- Roll out ⅔ of the dough into a 200 mm. (8") diameter circle and the other ⅓ portion into a 150 mm. (6") diameter circle.
- Line the base and sides of a greased 150 mm. (6") diameter pie dish with the larger (2/3) portion of the rolled dough.
- Spread the pizza sauce on the base.
- Add the filling and cover with the smaller portion of the rolled dough.
- Seal the edges using a little water and trim the edges using a knife. Discard the excess dough. Prick the top of the pie with a fork at regular intervals.
- Brush the top with the milk.
- Bake in a pre-heated oven at 180°C (360 °F) for about 20 minutes or till evenly browned.
- Remove from the oven and glaze with the butter.
- Cut into wedges and serve hot.
