Ingredients
- For The Green Chutney:
- 1 cup chopped mint leaves (phudina) leaves
- ½ cup chopped coriander (dhania)
- ¼ cup roughly chopped onions
- 1 pc lemon
- ¼ tsp sugar
- 2 to 4 green chillies , chopped
- salt to taste
- Other Ingredients:
- salt to taste
- 2 cups baby potatoes , unpeeled
- ¼ tsp black salt (sanchal)
- 2 tsp low-fat butter
- 1½ tsp cornflour , dissolved in 1 tbsp water
- 1 tbsp finely chopped red capsicum
Instructions
- For the green chutney:
- Combine all the ingredients and blend in a mixer to a smooth paste using very little water. Keep aside.
- How to proceed:
- Combine 4 cups of water and salt in a broad pan and bring to boil.
- Meanwhile prick the potatoes with a fork, add them to the boiling water and cook on a medium flame till done. Drain and keep aside to cool for 5 minutes.
- Peel the potatoes, add the black salt, salt (as required) and prepared green chutney and toss well. Keep aside to marinate for 15 minutes.
- Melt the butter in a non-stick pan, add the potatoes, capsicum and cornflour mixture and sauté on a medium flame for 4 to 5 minutes
- Serve hot.
