Ingredients
  • For The Green Chutney:
  • 1 cup chopped mint leaves (phudina) leaves
  • ½ cup chopped coriander (dhania)
  • ¼ cup roughly chopped onions
  • 1 pc lemon
  • ¼ tsp sugar
  • 2 to 4 green chillies , chopped
  • salt to taste
  • Other Ingredients:
  • salt to taste
  • 2 cups baby potatoes , unpeeled
  • ¼ tsp black salt (sanchal)
  • 2 tsp low-fat butter
  • 1½ tsp cornflour , dissolved in 1 tbsp water
  • 1 tbsp finely chopped red capsicum
Instructions
  1. For the green chutney:
  2. Combine all the ingredients and blend in a mixer to a smooth paste using very little water. Keep aside.
  3. How to proceed:
  4. Combine 4 cups of water and salt in a broad pan and bring to boil.
  5. Meanwhile prick the potatoes with a fork, add them to the boiling water and cook on a medium flame till done. Drain and keep aside to cool for 5 minutes.
  6. Peel the potatoes, add the black salt, salt (as required) and prepared green chutney and toss well. Keep aside to marinate for 15 minutes.
  7. Melt the butter in a non-stick pan, add the potatoes, capsicum and cornflour mixture and sauté on a medium flame for 4 to 5 minutes
  8. Serve hot.
