Eggplant Ridge Gourd Curry - Beerakaya Vankaya Kura

A fresh gravy is prepared with fried onion and whole spices. Ridge gourd / turai is chopped up along with baby eggplants. They are then cooked in freshly prepared gravy till soft. Serve eggplant ridge gourd curry with steamed rice.
Ingredients
- Ridge Gourd ½ Large Size
- Baby Indian Eggplants 2
- Green Chile 1
- Onion 1 Small
- Mustard Seeds ¼ tsp
- Cumin Seeds ¼ tsp
- Urad Dal ¼ tsp
- Cashews 3
- Salt to Taste
- Oil 2 tsps
- Tempering:
- Mustard Seeds ¼ tsp
- Cumin Seeds ¼ tsp
- Urad Dal ¼ tsp
- Curry Leaves 5
- Oil 1 tsp
Instructions
- Remove stem, wash and slice the green chile.
- Remove skin, wash and roughly chop ridge gourd.
- Remove stems, wash and chop eggplant into small pieces.
- Peel and roughly chop the onion.
- Heat oil in a pan, add mustard seeds, cumin seeds and urad dal.
- Let mustard seeds start spluttering, add onion and green chile.
- Add salt and fry till onion turns light golden brown.
- Remove the mixture onto a bowl to cool it down to room temperature.
- Grind onion mixture into smooth paste along with cashews.
- Heat oil in a pan, add all other talimpu ingredients in order.
- when mustard seeds start spluttering, add chopped ridge gourd, eggplant and salt.
- Fry for couple of seconds and add the ground onion sauce.
- Stir in a cup of water and cook covered on low flame till eggplant and ridge gourd turns soft.
- Season with salt if necessary and remove from heat.
- Serve eggplant ridge gourd curry with steamed rice and dollop of ghee.
Notes
Make sure ridge gourd and eggplant is cooked thoroughly before removing the gravy from heat.
Suggestions: If eggplant or ridge gourd is not cooked well, put it back on heat and cook covered on low flame till done.
