Mix Vegetable poriyal is mix of all vegetables cooked and tossed with freshly grated coconut. It is also known as porial/dry curry/koora/sabji and goes well accompanied with rice as a side dish and also with any type of chapathis/parathas/rotis.
Ingredients
- Chopped Coriander 1 Springs
- Carrots 200 Grams
- Beans 200 Grams
- Curry Leaves 1 Springs
- Fresh Grated Coconut
- Green Chillies 1 Teaspoons
- Hing 1 Pinch
- Urad Dal 1 Teaspoons
- Turmeric Powder 1 Teaspoons
- Salt 1 To Taste
- Red Chilli 3 Piece
- Onions 2 Numbers
- Mustard Seeds 1 Teaspoons
- Cashew Nuts 2 Tablespoons
- Cumin 1 Teaspoons
- Oil 1 Tablespoons
- Channadal Split Bengal Gram 1 Tablespoons
Instructions
- Wash carrots and beans properly. and boil till hald done (optional you can) cook directly just cut them small.
- heat oil add mustard ,red chilli,cumin channadal cashew urad dal • add hing • Add turmeric powder, onion chopped chiliies curry leaves and salt. • add vegetables saute till theyare cooked.
- add grated coconut .
- Saute it well. serve hot
- with rice or pulkha .
