MIXED GREENS SAI BAAJI
This traditional Sindhi recipe is a good combination of leafy vegetables with dal which provides plenty of calcium, protein, iron and vitamin A. Relish it with steamed rice or any kind of roti.
Ingredients
- Chukkey Ke Bhaji 1 Cup
- Dill Leaves ½ Cup
- Spinach 1 big Cup
- Fenugreek Leaves ¼ Cup
- Chanadal (soak) 2 Tablespoons
- Potatoes ½ Cup
- Lady’s Finger ½ Cup
- Bottle Gourd ½ Cup
- Eggplant ½ Cup
- Hing 1 Pinch
- Tomato 1 Cup
- Turmeric ¼ Teaspoons
- Chopped Green Chilly 1 Tablespoons
- Coriander 1 Bunch
- Chopped Onions 1 Cup
- Chopped Garlic 1 Tablespoons
- Chopped Ginger 1 Tablespoons
- Oil 2 Tablespoons
- Salt To Taste
- Coriander Powder 1 Tablespoons
Instructions
- Take a pan heat oil and add ginger garlic, hing, chopped onions, salt, green chilies , turmeric, add tomatoes, bottle gourd, lady’s fingers, eggplant, potatoes, add some chanadal (soaked) add spinach, fenugreek leaves, chukkey ke bhaji, coriander, dill leaves, add salt, water, coriander powder.
- Pressure cook (2 whistles) till all this vegetables cooked after cooking mashed these vegetables.
- And serve it hot.
