A mellow combination of spinach and methi leaves with different types of mixed vegetables. Its worth trying!
Ingredients
- 3 cups chopped spinach (palak)
- 2 tbsp chana dal (split bengal gram)
- 100 gms chopped mixed boiled vegetables
- 1 tomato , chopped
- 1 onion , chopped
- 25 mm ( 1") piece of ginger (adrak) , minced
- ½ tsp turmeric powder (haldi)
- 1 tsp coriander (dhania) powder
- 1 tsp chilli powder
- 2 tsp oil
- salt to taste
Instructions
- Soak the dal in water for 3 hours. Drain.
- Heat the oil and fry the onion for 3 minutes.
- Add the vegetables and tomato and fry again for 3 minutes.
- Add the ginger, turmeric, coriander and chilli powders and salt and mix well.
- Add the soaked dal and cook for 2 minutes.
- Add the spinach and cook for 2 minutes while stirring continually.
- Cook the mixture in a pressure cooker until 2 whistles.
- Blend the mixture using a hand blender.
- Serve hot.
